Ingredients

For 8 servings

  • 500 g all-butter puff pastry
  • 500 ml whole milk
  • 1 piece vanilla pod
  • 5 piece egg yolks
  • 100 g sugar
  • 40 g cornflour
  • 20 g butter
  • 200 g icing sugar for the glaze
  • 20 g melted dark chocolate
  • 1 tbsp icing sugar for the pastry

Method

  1. Step 1. Roll the puff pastry to 3 mm, prick it, lay it on a tray, cover with baking paper and a second tray. Bake at 190 °C until golden. Dust with icing sugar and caramelise for a few minutes at 220 °C.⏱ 35 min
  2. Step 2. For the cream: heat the milk with the split vanilla pod. Whisk the yolks, sugar and cornflour, pour in the hot milk, return to the heat and cook, whisking, until thick.⏱ 8 min
  3. Step 3. Off the heat, stir in the butter. Press cling film onto the surface and cool completely.⏱ 120 min
  4. Step 4. Cut the pastry into three bands of the same size. Whisk the pastry cream smooth and spread it on two bands.
  5. Step 5. Stack the bands. Cover the top with an icing of icing sugar and a little water, draw lines of melted chocolate and marble them with the tip of a knife.
  6. Step 6. Chill for two hours before cutting with a serrated knife.⏱ 120 min

Story and cultural note

The mille-feuille relies on the contrast between a deeply baked, crisp pastry and a soft cream. To keep the layers flat, the pastry is baked under a heavy tray.
